Ratatouille is a tasty and totally vegetarian dish which was created way before words like gluten-free or vegan became all the rage.  Celebrity chefs have given it their seal of approval today, but this vegetable stew actually gained popularity simply on its own merit.

The Origins of Ratatouille

Although ratatouille has a French name and it traces its origins to Nice, it is a dish that has been well-loved for decades in communities along the Mediterranean coast. In many places, this stew is known as ratatouille niçoise, but Greeks know it as tourlou or briam. Catalan has samfaina, the region’s own version of this dish, and southern Italy has ciambotta.
